{French Bread}

{Ingredients} 2 ¼ c. warm water 2 Tbsp sugar 2 Tbsp yeast 1 Tbsp salt 2 Tbsp oil 5 ½ -6 cups flour-stirred before measured {Directions} First dissolve sugar and yeast in the warm water. Let this proof—or sit for a few minutes until it bubbles. Then add salt, oil and 3 cups of flour and beat well (At this point I switch to my dough/kneading attachment on my Bosch mixer) Add in 2 1/2 -3 more cups of flour. The dough should clean off the sides of the bowl and not be too sticky. Knead for a few minutes. Leave the dough in the mixer to rest for 10 minutes and then stir it down (turn on your mixer for 10 seconds) and then allow to rest another 10 minutes. Repeat for a total of 5 times. Then turn dough onto a floured surface and knead it 2 or 3 times to coat with flour. Divide into 2 equal parts. Roll each part into a 9×13 rectangle. {Pizza Crust}

{Ingredients} 2 cups warm water 1 Tbsp yeast 2 Tbsp olive oil or butter 2 tsp sugar or honey 2 tsp salt addition of Italian seasoning and garlic powder if so desired {Directions} Mix yeast in with sugar and water. Let proof. Add olive oil and flour then salt. Stir until dough pulls away from the sides. Let rise.

{Brown Bread}

{Ingredients} 1 1/2 cups warm milk 2 Tbsp salted butter, softened 1/2 cup brown sugar 2 2/3 cups flour 1 cup ground oatmeal 1 Tbsp cocoa 1 Tbsp sugar 1  tsp salt 2 1/4 tsp instant yeast 1 Tbsp oatmeal (for top of loaves) {Directions} Warm milk. Add yeast and sugar. Let proof. Add oatmeal, cocoa, salt, butter. Stir in flour and mix until dough pulls away from the sides. Let rise. Form into six to eight baguettes. Place on oiled pan. Cut three slits with a sharp serrated knife on top of each loaf.  Moisten tops with water and sprinkle oatmeal on loaves. Let rise again. Bake at 350 degrees for 20 minutes.  * Adapted from King Arthur Flour Honey Wheat Black Bread Recipe  in order to make a copycat Cheesecake Factory bread. It is not exactly the same but turned out to be a really good recipe.

{Sausage & Cheese Stuffed French Bread}

{Ingredients} 1 batch of French bread dough (add 1 Tbsp each garlic powder and Italian seasoning to dough) 1 package of cooked sausage crumbled (preferably Jimmy Dean) 1 package Italian cheese, mozzarella, or mozzarella & cheddar 1/2 stick butter melted with 1 tsp fresh garlic added {Directions} Roll out dough into a rectangle as if about to roll it into a French bread loaf. Spread melted butter over rectangle. Sprinkle sausage and cheeses over the dough leaving an inch on all edges. Roll up and seal the edges. Place seam side down on baking sheet. Bake at 375 degrees for 30 minutes.
