{Lemon, Thyme, & Parmesan Orzo}

Melt the butter over medium heat in a skillet. Pour the orzo in and stir until it is toasted. Add the minced garlic. Pour in the chicken broth and bring to a boil on high heat. Then reduce to a low simmer and cook for 8 to 10 minutes or until most of the liquid has been absorbed. Remove from heat and stir in cheese, chicken, thyme, lemon juice, zest, salt, and pepper. Serve.
- 1 Tbsp butter
- 1 cup orzo pasta
- 1 minced garlic clove
- 1¾ cups chicken broth
- ⅓ cup grated Parmesan cheese
- 1 Tbsp fresh minced thyme leaves
- 1 tsp fresh lemon juice
- 1 tsp lemon zest
- ¼ tsp salt
